Story

High-grade coffee grown in the Ethiopian highlands — coffee's homeland — passes through MTSPACE COFFEE's green partner Cobinz and the C2 decaffeination process to become premium decaf green, then a delicious decaf roast. The C2 process uses mineral-rich Gangwon-do water and activated carbon to selectively remove caffeine from the green beans; after about ten hours of processing the beans are dried and finished. Unlike ordinary decaf, it keeps Yirgacheffe's signature floral character and clean, bright flavour.

Q. Which brew methods suit it best?

Single origins express their origin character most clearly through filter (pour-over) and espresso.

Q. What is MTSPACE COFFEE's roasting style?

For single origins, we roast to reveal the bean's own character rather than layering flavour through sugar browning, so the origin's personality is clearest when freshly roasted. Our blends express a character unique to MTSPACE: for consistent supply, we blend Ethiopian natural and Ethiopian washed coffees, each roasted to the right degree. Both single origins and blends are roasted to deliver excellent quality in every cup, whenever you drink them.

Q. When is it roasted and shipped, and how does aging work?

We roast every Monday and Tuesday and ship on Tuesday and Wednesday. Beans settle into their fullest flavour after a short resting (aging) period — see the recommended drinking window under more information below.

MTSPACE COFFEE is at its best when enjoyed 14–28 days after roasting, on average.
That said, we design our coffees so their character comes through beautifully before and after that window too, depending on your brew method.
Apart from our blends (dark · medium · light), we do not roast single origins separately for espresso and filter. We prefer to express the coffee's inherent flavour rather than flavour developed through sugar browning during the roast.
We roast every Monday & Tuesday.
Online orders ship every Tuesday & Wednesday.
If an item is out of stock, it is roasted fresh on the next roast day before shipping.
In that case, please allow roughly 3–5 additional business days.
Orders are filled with the earliest-roasted coffee first (up to 7 days after roasting). If you'd prefer a fresher batch, please leave a note with your order.
