El Tablón, in the Nariño highlands of Colombia, produces balanced coffee thanks to Andean volcanic soil and near-equatorial sunlight. Traditional washed processing gives milk-chocolate and caramel sweetness with clean orange and roasted-nut acidity — an everyday specialty you can drink daily. Colombia's largely mountainous terrain varies in altitude and climate by region, yielding diverse coffees; it grows only 100% arabica, and the systematic support of the FNC lets even small farms produce distinctive, consistent lots. The ‘late harvest’ practice of leaving cherries longer on the tree slowly concentrates sugars and fruit, like a sweet late-picked wine — a method that rewards the farmer's careful watch to avoid over-ripening.
