The WBrC is a world championship contested with a single cup of filter (brewed) coffee. With no espresso and no milk, what decides the result is the purity of coffee selection · water · extraction design · communication. This chapter covers the Rules & Regulations, the scoresheets, the system, and the preparation methodology. The reference is the 2025 WBrC Rules & Regulations.
Purpose — why the Brewers Cup
The same broad purpose as the WBC — to select someone to represent the industry, and through the preparation to train and deepen oneself. The focus, however, is placed on the essence of brewing.
Brewing reveals the interaction of green coffee, water and extraction in its purest form. In preparing, one digs deep into water chemistry and extraction theory and becomes connected to producers and researchers.
The appeal of the WBrC lies in making "the most refined difference out of the simplest coffee". In place of the spectacle of espresso, the language of the stage is the transparent completeness of a single cup.
① A reason to go deeper into water and extraction theory. Preparing for the WBrC forces you into water chemistry and extraction theory. The knowledge gained in that process raises the level of the shop's brewing and QC wholesale after the competition.
② A network of producers and researchers. Searching out rare lots and designing water connects you with farms, green coffee traders and researchers. Those relationships become an asset for later sourcing and collaboration.
③ Establishing a brewing identity. Preparation that concentrates on "a simple cup of filter" becomes the occasion for refining your own extraction philosophy and signature method. The competition is itself a training ground for personal branding.

The First Priority
The same as the WBC: do what the scoresheet rewards. The WBrC, however, has two services of different character — the Open Service (your own coffee, free choice) and the Compulsory Service (coffee provided by the competition) — and each demands a different strategy.

- Open Service — your own coffee, 3 cups of the same beverage → judged by 3 judges. 5 min set-up + 10 min performance time. (Disqualification beyond 11 min; beyond 10:00, −0.5 points per second, up to −30)
- Compulsory Service — brewed with the 350 g of coffee provided by the competition, and includes assessment of Sensory Uniformity. Since the information cannot be known in advance, it tests on-the-spot judgement.
R&R Analysis — analysis
The weapon in the Open is optimisation in advance (coffee · water · recipe · narrative); the weapon in the Compulsory is cupping on the spot and deciding a recipe quickly. Analyse the difference in point allocation and character between the two services and design the preparation separately. The round structure is confirmed 8 weeks before the competition.
"The Brewers Cup also serves 12 cups" — false (3 cups). "The WBrC is assessed on 10 attributes" — false (7 Cup attributes + 4 Barista attributes). Only by knowing the structure precisely does the preparation stay on course.
① Dual preparation for Open and Compulsory. The Open targets the limit of optimisation in advance (coffee · water · recipe · narrative); the Compulsory targets cupping and recipe decisions on the spot. Because their character differs, split the practice into two designs.
② Internalise the time regulations. Learn the 10 min performance time, disqualification beyond 11 min and the overrun deductions as a second-by-second timeline in the body. Rehearse so that the three-cup service and the explanation finish within the time.
③ Confirm the round format. The round structure changes with the number of competitors (≤ 38 vs > 38) and is confirmed 8 weeks beforehand, so as soon as it is confirmed, redistribute the weighting between Open and Compulsory preparation.

In the Open, Overall Workflow and Technical Uniformity (consistency of ratio, grind, brewer, filter, time, temperature and turbulence across the 3 cups) are assessed at 0–3 × 4. In the Compulsory, the Head Judge looks at Sensory Uniformity and the Beverage Information Form. The consistency of the 3 cups is the Head Judge's central concern.
Open Service maximum 226 points, Compulsory maximum 213 points. Performance time 10 min, disqualification at 11 min. Time and consistency are the major deduction risks and therefore the points to manage.
All 7 attributes use a 0–9 intensity scale, but a higher intensity does not mean a higher score. The intensity of Acidity and Mouthfeel is unrelated to quality — the judging looks at how well that intensity works (→ Chapter 03). Tie-break: Flavor > Aftertaste > Overall.
① Choosing the coffee by the tie-break rule. Knowing the tie-break (Flavor > Aftertaste > Overall), you invest in a coffee and a recipe with outstanding density of Flavor and Aftertaste. The rule gives you the criterion for selection.
② Securing uniformity across the 3 cups. For Technical Uniformity, standardise weighing, timing and turbulence to the second. Since the Head Judge looks at the consistency of the 3 cups, it is not one cup but three cups that must be the same.
③ Announcing the descriptors. In the script, announce precisely the flavours the judges will perceive, and so secure Accuracy. The key is to show not the intensity but "how well that intensity works" (intensity ≠ quality).
System — evaluation system · competition operations
3 Sensory judges + 1 Head Judge. The 7 Cup attributes (0–9) measure the result, while the Barista Evaluation measures process and communication separately. The Compulsory additionally looks at Uniformity and the accuracy of the information. Scores of 0–3 require Head Judge approval.
Open: 5 min set-up + 10 min performance; 3 cups of the same beverage. Regulations on time overrun and waste, and on the water and equipment brought in. Since the number of rounds changes with the number of competitors, check the competition format in advance.
① Time management in the Open. To finish set-up, explanation and 3 cups consistently within 10 min, fix water temperature, weighing and timing with advance set-up and a checklist. Internalise disqualification beyond 11 min and the overrun deductions through rehearsal.
② Preparing for the Compulsory. Repeat the training of grasping an unknown coffee in a 5-minute cupping and deciding the recipe. Its character differs from the advance optimisation of the Open, so on-the-spot judgement has to be built separately.
③ Confirm the round format. The number of rounds (3 vs 2) changes with the number of competitors and is confirmed 8 weeks before the competition, so check the format in advance and allocate the weighting between Open and Compulsory preparation.
Intensive research — coffee · water · technique
WBrC research resembles that for the WBC, but one axis is decisively added: water. The difference in a single cup of filter is largely decided by the composition of the water.

The top competitors at the WBrC design their custom water with precision. Empirically, raising the proportion of magnesium is associated with the complexity and acidity side, raising the proportion of calcium with the sweetness and body side, and lowering alkalinity with preserving acidity. The same coffee becomes a different cup through water, so water is an independent axis of the research (→ Chapter 02.3). ※ The directionality of Mg/Ca is an empirical tendency, and the binding of specific acids is not academically established, so always verify blind to confirm the actual difference.
① Designing direction through water. For "brighter", test water with a raised proportion of magnesium; for "rounder", water with a raised proportion of calcium. But do not lean on the tendency — settle it with A/B blind scoring using the same coffee and the same recipe.
② Three-way coherence of coffee, water and recipe. For a high-grown, acidity-driven coffee, match low-alkalinity water that keeps the acidity alive with a bright extraction; for a sweetness-driven coffee, water that supports the body with a stable extraction. Align the three axes on a single objective.
③ Linking technique and equipment research. Investigate drippers (cone, flat bottom, hybrid), pour patterns and flow rate together with the water design, and narrow down by experiment the combination that creates the flavour you want. It is not water alone but the whole extraction that decides the result.
Concept — the message carried in one cup
The same flow as the WBC — find genuine interest in the research, compress the concept into a single sentence, and develop it through coffee, water, recipe and script. Since the only medium is a single cup of filter, however, the connection between concept and taste has to be more direct.
There is no screen such as milk or a signature drink. The concept must be proved immediately by the coffee selection, the water and the extraction. It persuades only when "why this coffee, why this water, why this recipe" runs in a straight line from the concept.
① A straight line from coffee to water to recipe. If the concept is "the crystallisation of acidity made by altitude" — choose a high-grown washed coffee, emphasise acidity and complexity by raising magnesium in the water (this being an empirical tendency, verify it blind), and set the recipe at a temperature and ratio that keep the acidic range alive.
② Using the purity of filter. Since there is no screen such as milk or a signature drink, "why this coffee, this water, this recipe" must connect directly to the concept. The script ties altitude, variety and water design into a single story.
③ Proving it in the taste. Points come when the judges taste the concept in the cup. The link between concept and taste has to be more direct than in the WBC for it to persuade — the single cup is itself the presentation.
Routine · presentation development
The concept is realised as one cup in ten minutes. The flow of diverge → converge → repeat is the same as in the WBC, but what matters here is the three-way coherence of coffee, water and extraction and the perfect consistency of the 3 cups.

- Coffee — fix the coffee that satisfies both the concept and the score.
- Draft Speech & Routine — draft the script, movement and timeline, mapping the score item targeted to each line.
- Technical Training — repetition until the 3 cups are brewed without deviation (standardising weighing, temperature and turbulence). For the Compulsory, training in deciding a recipe on the spot.
- Fine-Tuning — refine water, recipe and script through rehearsal and feedback until complete.
For the Open, prepare the limit of optimisation in advance (coffee · water · recipe · narrative); for the Compulsory, build separately the training of grasping and adjusting to an unfamiliar coffee quickly. The two preparations differ in character, so the practice methods must be split as well.
① Aligning the Open script with the score. Match the announcement to the score — "you will find grapefruit, black tea and a long finish (→ Flavor · Aftertaste Accuracy)" — and repeat while measuring the ratio, temperature and turbulence of the 3 cups.
② Compulsory loop training. Every week, run the loop of 5-minute cupping of an unknown coffee → fixing the recipe → reproducing 3 cups to build on-the-spot judgement and reproducibility. Keep the practice method separate from the Open.
③ Verifying the custom water. Make the water for the Open in several compositions, confirm the actual difference by blind scoring on the seven attributes, and only then fix it. Do not take "Mg is brighter" on faith — harden it with data. The preparation is itself the stability on stage.
Questions this chapter answers
- How does WBrC differ from WBC?
- WBC asks for three beverages — espresso, milk and signature — while WBrC is contested with one filter coffee. WBrC splits into Compulsory Service, using coffee supplied by the organisers, and Open Service, using coffee you bring. With fewer variables in play, coffee selection and water design carry far more weight.
- Why is water so important in the Brewers Cup?
- The cup is 98% water, and because the competition allows wide freedom in equipment and recipe, water is the large remaining variable. Total hardness is used to design extracting power and alkalinity to buffer acids, while the ratio of magnesium to calcium adjusts which axis is brought forward.
- How is an Open Service coffee chosen?
- Rarity alone is not enough; it needs a narrative and it needs to be reproducible. It must be clear what the judges are meant to perceive in that coffee, and that flavour has to come back reliably under competition-day conditions. Competitors often work directly with the producer to secure a small high-quality lot.
